Blueberry Muffins

This is your Friday recipe on Thursday.  Our little family from Kansas will be here on Friday.  I just love having our three  little people visit, we enjoy their parents too. 

This muffin recipe is vegan and easy.

2 Cups whole wheat flour

1 Heaping TBS Soy Powder or Flour

1/3 Cup Sugar, add 1-2 TB more

1 TBS Baking Powder

1/2 tsp. Salt

1 1/2 Cup Soy Milk

1/3 Cup Oil

1 Cup Blueberries frozen or fresh( I add more)

I love to put walnut halves in mine but the original recipe does not call for them.  I add about 3/4 Cup walnuts.

Mix dry ingredients, add oil and milk and stir just enough to mix and add blueberries last.

Bake 400 degrees for 20 minutes
