One of my special readers asked if I have ever tried Cashew Cheese in place of the cheese called for in the Thursday recipe. I know what you are thinking–yuck– don’t be too hasty, I actually really like this cheese made from cashews. I almost crave it and it is so much better for you, it won’t clog your arteries. I hope you let me know if you try it and like it, don’t tell me if you don’t. Just kidding.
1 Cup Cashews
1 Cup hot water
2 2/3 T Nutritional yeast flakes
3/4 t Onion powder
1/4 t Garlic powder
1/2 t Salt
4 oz. Jar pimentos or 2 heaping T tomato paste
Blend in blender then add 2-3 T lemon juice. The best way to get this smooth is to blend the nuts with a small amount of the water and when it is smooth add the rest.
This is yummy used in Lasagna in place of cheese.
