Szablis’ Chili

I am giving  you your Thursday recipe a day early, because I am having a garage sale with a friend on Thursday and Friday.  I must confess I have not tasted this chili but my friend says it is yummy and I believe her.  I love chili, I love most any thing right now maybe even cardboard.  I have had chili with cocoa in it and I must say it was delicious.
I have to tell you a funny thing my grandchild said, we were getting ready to take a shower together and her comment was, “Mom mo, how come your tummy looks smaller with your clothes on and not so small with them off?”  I had no explanation LOL.
Szablis’ Chili Recipe (More or Less!)
 
1 large onion
3 Tablespoon olive or canola oil
3-5 Tablespoon each:  cumin, coriander, oregano, paprika, chili powder, onion and garlic powders
1 bag Boca Vegeburger crumbles
1 cup frozen corn
1 Tablespoon salt
1 teaspoon black pepper
 
Saute onions and spices in oil.  Add the salt and pepper, burger, and corn.  Cook two minutes.
 
Add:
3 cloves garlic, minced
1-16 ounce can diced tomatoes
1- 8 ounce can tomato sauce
1/2 cup ketchup or chili sauce
Dash chili flakes
2 Tablespoons cocoa, unsweetened
 
Check spice level.  Add additional amounts of spices and salt to taste, keeping in mind that the spices will become a little stronger as they cook in.
 
Add:
1 small can each of kidney beans, black beans, and pinto beans
1/4 cup water
 
Simmer for 45 minutes on medium-low heat, covered.  Stir frequently.
 
Serve with fresh white onion, cheese, and cream cheese.
 
Serves six.
