Please Pray With Me. . .

Have you ever known a person who takes everything to heart.  If they find out someone has cancer it is almost like they have cancer.  If they found out someone has a marriage problem, they feel the pain all the way to their bones.  I have a friend like that, she just feels other people’s pain so very much.  It makes me feel sad for her because her own life is less than it should be because she is in pain over someone else’s problems.

Having said all of that, I feel a little bogged down myself.  There is so much pain in this world the best place for me to go with this pain is to Jesus and yet I have so little faith.  We have talked about this before, you already know my faith is weak, I have not seen a ton of intervention by God.  Oh wait a minute, I should say, God hasn’t done what I think He should do.  Oh, oh wait a minute, so does that mean He isn’t listening, He isn’t working miracles?  I don’t know I am confused. 

Here is the deal, my friend, Terry Schwartz has cancer. The doctors have not given him much hope especially since his PSA has doubled since he finished his radiation treatments.  I am praying for a miracle and I ask you to pray for him too.  I don’t know what God has in mind for Terry, I do know God is plenty capable of healing.  I just don’t have the answer that I am looking for and I know you don’t either.  Please join me in praying for Terry and his family as they walk this walk.

I am headed to MN for the last women’s retreat of the season, it should be a lovely weekend.  I am doing a seminar on Women’s Ministries and I am looking forward to it.

Here is your Thursday recipe on Friday–I love these apples, they are great to use in muffins, or on your oatmeal.  Next week I will give you a muffin recipe that you may use them in.

Roasted Apples

1 pound each of Granny Smith and Pink Lady Apples–core and cut into about 1 inch pieces.  1 Tbs. cinnamon, 1/2 cup Agave Nectar, 1/4 Cup fresh lemon juice.  You can get Agave Nectar at Walmart or a health food store or Costco.  Line your cookie sheet with foil or parchment paper.  Mix apples and all the rest of the ingredients together and spread on cookie sheet.  Bake 35 minutes, rotating the pan after 20 minutes.  The apples will be soft.  Let stand for 30 minutes or until cool.  These will keep in the refrigerator for a week.

This is my new cookbook!  It is vegan and uses some odd ingredients but healthy ones.  I can’t wait to bake something, but who’s going to eat it? Speaking of eat, I weighed in today down 1/2 pound, 33 pounds in all.  I’m headed to the Red Clover in a few minutes just to get some ingredients.

LOL I am back from my shopping and I left $89 behind at the store.  Red Clover has good prices but mercy this natural stuff is expensive.  I am leaving town I think I will make a surprise for my man and put it in the freezer.

I wonder, did I need another cookbook when I have all of these?

I would guess  an extravagance like this will be out of the question when I am fully on the Dave Ramsey plan.  Looking at the bright side, I had the money to pay for it I didn’t have to charge it.  Oh mercy, this Dave Ramsey thing may not be very fun.

Cashew Cheese

One of my special readers asked if I have ever tried  Cashew Cheese in place of the cheese called for in the Thursday recipe.  I know what you are thinking–yuck– don’t be too hasty, I actually really like this cheese made from cashews.  I almost crave it and it is so much better for you, it won’t clog your arteries.  I hope you let me know if you try it and like it, don’t tell me if you don’t.  Just kidding. 

Cashew Cheese

1 Cup Cashews

1 Cup hot water

2 2/3 T  Nutritional yeast flakes

3/4 t Onion powder

1/4 t Garlic powder

1/2 t Salt

4 oz. Jar pimentos or 2 heaping T tomato paste

Blend in blender then add 2-3 T lemon juice.  The best way to get this smooth is to blend the nuts with a small amount of  the water and when it is smooth add the rest.

This is yummy used in Lasagna in place of cheese.



Blueberry Muffins

This is your Friday recipe on Thursday.  Our little family from Kansas will be here on Friday.  I just love having our three  little people visit, we enjoy their parents too. 

This muffin recipe is vegan and easy.

2 Cups whole wheat flour

1 Heaping TBS Soy Powder or Flour

1/3 Cup Sugar, add 1-2 TB more

1 TBS Baking Powder

1/2 tsp. Salt

1 1/2 Cup Soy Milk

1/3 Cup Oil

1 Cup Blueberries frozen or fresh( I add more)

I love to put walnut halves in mine but the original recipe does not call for them.  I add about 3/4 Cup walnuts.

Mix dry ingredients, add oil and milk and stir just enough to mix and add blueberries last.

Bake 400 degrees for 20 minutes

Apricot Oatmeal Bars

It’s almost Friday and time for a new recipe, don’t you think?  I know you thought I would be out of town, well I didn’t go.  Have you looked at the weather?  My women’s ministries event will be another time.  Glacier View Ranch is to get 3 that’s right 3 feet of snow.  Thinking of snow makes me think of these great bars.  They are vegan and yummy.

3/4 cup Smart Balance Margarine

1 cup dried fruit I like apricots cut in small pieces

1 1/2 cups rolled oats

1 cup whole wheat flour

1 cup brown sugar or less

1/4 teaspoon salt

1/4 teaspoon cinnamon

1 1/2 teaspoon vanilla

Mix all of this together

Line an 8 x 8 pan with foil and pat this  into the pan.

Bake 350 degrees for 35-40 minutes


You will love this recipe, it uses whole wheat flour and it is vegan but best of all it is yummy and easy.  Another recipe from my daughter Robin.

6-7 ripe bananas–peel and I just throw them in the bowl and use the mixer to mash them.

1 1/4 Cup Brown Sugar                   1/3 Cup Olive Oil

1/4 Cup Water                                    2 Teaspoons Vanilla

3 Cups Whole Wheat Flour            2 1/2 Teaspoon Soda

1/4 Teaspoon Salt                             1 1/2 Cup Nuts

Just mix it up and  spray 2 or 3 loaf pans.  Bake 350 degrees for 30-40 min.
