Mexican Eggplant

I actually crave this yummy dish.  I know what your thinking, EGGPLANT!!  Trust me this is really yummy, I love it.

1 large Eggplant

1 Small can tomato sauce and 1 can drained diced tomatoes

1 can mild green chilis

1/4 Cup green onions

1/2 tsp ground cumin (I like a little more)

1/2 tsp. garlic powder

1 Cup Cheddar Cheese

6 olives Sliced

1 Cup Sour Cream (I skipped the sour cream)  We enjoyed cottage cheese along with the dish.

Peel and slice eggplant, spray with Pam, line a cookie sheet with parchment paper and place the eggplant single layer on the sheet and bake 450 20 minutes.

Combine tomato sauce, chilis, green onion, cumin and garlic powder and simmer 10 minutes.  In 9 x 13 baking dish layer eggplant, sauce and cheese, top with sour cream and olives.  Bake uncovered 350 20 minutes.
