Five Star Zucchini Bread
1 1/2 cup flour (half W.W. if you wish)
1 tsp. ground ginger (fresh would be spectacular here)
1 1/2 tsp.
1/4 tsp. salt
1 cup sugar (3/4)
1/4 cup vegetable oil. . . I like that low amount! Could use 1/8 oil and 1/8 applesauce
2 eggs slightly beaten–can use egg replacer
2 T. fresh lemon juice
1 cup shredded zucchini
1/2 cup chopped walnuts–or more
Greast and flour 9x5x3 loaf pan.
In lg bowl mix together all dry ingredients.
In another bowl combine all wet ingredients and add to the dry.
Stir to blend, do not over mix..
If your garden is growing well you may have plenty of squash, I grate and freeze mine in exactly the amount I will need for my recipe. It is fun to pull it out in the winter to use.
